White Mustard

  • White mustard (scientific name Sinapis alba) is a plant known for its important role in plant defense against fungi and bacteria because of its high concentration of glucosinolates. When a plant is injured, these glucosinolates are hydrolyzed to create isothiocyanates (ITC), which are recognized for their benefits to humans, as a poly-saccharide and source of protein.

  • The white mustard is a component of Mustard Brand and Mustard Seed Flour, which are both natural preservatives of bread. There is no specific dosing reported for white mustard specifically.

  • Potential adverse effects are due to the toxic compounds that may occur within extreme ingested amounts of seeds, including impairment of long chain fatty acid transport, leading to accumulation of triacylglycerols in the heart and other tissues. Interactions with drugs and other herbs were not reported.
